[MinnowBoard] Problem with i2c on windows 8.1

Out of curiosity, why would you need the other i2c buses visible?
(Assuming that the i2c interfaces you refer to as 6 & 7 are the low
speed and high speed expansion header i2c interfaces.  It's hard to tell
on that as everything refers to them slightly differently)
